What stops one of our people seeing another client's data?

Architecture, not a permission someone remembered to set. Each client is a separate environment with its own credentials, configuration and audit trail, which is why the diagram above shows a wall rather than a rule.

Do our clients need to do anything?

They create a read-only credential in their own account, which is a two minute job they can revoke themselves at any moment without asking you or us. Most of the sources need nothing applied for.
